ALL OUR CHEESES ARE BRITISH CHEESES and we go direct to all of our cheesemakers so we can learn first hand how the cheese is made and what to expect with the change of milk with the seasons and differences as the cheese evolves and matures.
Giving feedback is a very important side to what we can contribute to this industry and we truly appreciate the information offered to us by experienced producers in return.
IT IS NOW COMMON KNOWLEDGE that there are more registered British Cheesemakers than there are French. The main interest here for us is that our fabulous British milk is now being used the make cheese that have taken their inspiration from stunning historical European recipes. Very exciting developments have been made over the last 15 years in our cheesemaking adding to an already re-generation of the best British regional classics. We hope to bring our excitement of how to enjoy these cheeses to our customers
THE CHEESE BOX EVOLVED FROM A PASSION
to re-discover and bring regional British cheeses to my local south London community fifteen years ago.
While still working as a freelance Art Editor, I studied Biodynamics and met with amazing farmers working with traditional methods and producing stunning results. Grazing, milk yields and traditional cheesemaking became my obsession.
INVESTING IN A VERY OLD rusty French van, I took the cheeses that I collected from small producers and sold them from regular pavement pitches that I found in my local area.
THE SHOP OPENED IN 2008 AND THE CHEESE IS STILL MATURING....
STILL DESIGNING AND WITH VERY YOUNG CHILDREN IF my customers required cheese at other times I delivered it to them in Cheese Boxes direct to their door....
.....The Cheese Box was born.
It was an amazing time to be connecting to our cheesemakers and see the response of people to their work. So when I moved my family to Whitstable, the Van came along too and the business grew alongside new local and British cheesemakers.
UNDERSTANDING HOW A CHEESE IS TO BE EATEN AND ENJOYED IS SOMETHING WE ARE AWAYS DISCUSSING WITH OUR CUSTOMERS AND MAKERS
